Chocolate Pancakes

Yesterday, being a lazy Saturday morning, I made some pancakes for breakfast. The kids were asking for whipped cream and chocolate syrup to go with it and we said that we only do that with chocolate pancakes. So, this morning, the kids asked for chocolate pancakes. We’ve always bought a mix for chocolate pancakes but since we haven’t done that in a while, I decided to look for a recipe online and mix a batch from scratch.

Thanks to the Internet, I found this recipe that doesn’t call for buttermilk. I just tweaked it a bit by adding 3 teaspoons of baking powder which made the pancakes fluffy. I also skipped the chocolate chips and the powdered sugar.


I made the pancakes and Jon made the chocolate syrup.  The cream, unfortunately, didn’t want to get whipped so it’s just cream.

Get a pancake.

Put a dollop of cream, as much or as little as you like.

Then drizzle with chocolate syrup.

It was great! Better than the box mix we used before. It would be even better with sausages or bacon on the side, which unfortunately we didn’t have at that time.  Dig in!

Mini Pancake Rolls

I’m always on the look-out for ways to make weekend breakfasts better.  There’s no rush to go anywhere and we could all enjoy our food but at the same time, no one wants to go to a lot of trouble cooking something first thing in the morning.  So when I saw these Mini Pancake Cinnamon Rolls, I knew I had to give it a try.

Pancakes are one of our breakfast staples anyway and it just takes a few extra steps to turn it into something extra special.  Besides, I had 2 pairs of little hands helping out in rolling the pancakes.

I had to change the drizzle recipe though.  Aside from the fact that we didn’t have cream cheese or sour cream, my family also didn’t feel like having it cinnamon flavored (which is so weird since we all love cinnamon rolls).  Anyway, I browsed the web to look for recipes and I found Paula Deen’s glaze simple enough but I couldn’t believe that I have to use 2 cups of powdered sugar.  So I kinda tweaked it a bit and I just melted about 2 T of butter, added about 3 T of milk and whisked in 1 cup of powdered sugar until smooth and at a consistency I liked.

After all the pancakes have been rolled, time to drizzle…

Let’s start cooking!

I’m sure this blog will be filled with sweet and sometimes unhealthy recipes so I decided to at least have a healthy start to it.  And what would be healthier than having oats for breakfast?  But not your ordinary boiled oatmeal, it has to be a little bit better than that.  Let’s have Oatmeal Pancakes instead!

It’s a fairly easy and straightforward recipe.  Just mix the dry ingredients in one bowl and the wet ingredients in another.  Pour the wet ingredients into the dry ingredients and combine.  But don’t overmix!  Heat the grill, wipe it with butter and cook the pancakes.

In minutes, breakfast is served!

I’m sorry about the cropping of the picture.  I have so much more to learn about photography and food styling.

Anyway, the pancakes were good.  You won’t even notice the oatmeal.  The oatmeal gives it a nice texture and makes it seem more fluffy.  If you’re ever bored with your regular oatmeal, make them into pancakes instead and have a healthy, hearty start to your day.
